老饕都知道的新都里，是老台北懷石料理傳奇之一，可惜獲米其林推薦不久，就宣布歇業。幸而新都里歷年培養的人才，在台灣各城市繼續接棒發光。位於嘉義市上海路的八璠日式料理，主廚正出身新都里，返鄉開業，供應無菜單套餐，館內只有8個座位，一個餐期最多只能接8位貴賓，每位餐費1000元起跳，亦可另給預算客製化。 自2015年開業以來，八璠日料洪師傅堅持每週二親自到台中買海產，他說，現在應該很難找到從採買、料理、出餐，以至訂位（討論菜單），完全一條龍專人服務的餐廳了。洪師傅手藝不俗，為人謙和有禮，每年都有一本親自整理的顧客筆記，詳細記錄客人飲食喜好與人際脈絡。是餐費僅收千元之譜，卻提供頂級餐廳等級的專業服務。
