Hidden in an alley, Cloud Peach Puff is Pāi-Pāi Choux’s pop-up puff, dedicated to R&D and promotion. Besides its Chiayi shop, it stages surprise pop-ups across Taiwan, hoping everyone can taste Pāi-Pāi Choux.
The “Cloud Peach Puff” uses the local Chiayi fruit “peach fig” grown by small farmers. The filling is made from only two ingredients—Japanese fresh cream and peach-fig purée—blended at a golden ratio for a silky, delicate flavor. Its simple cloud shape needs no fancy decoration; it looks like a cloud and feels weightless when bitten, as if you were chewing a cloud itself, expressing a pure wish to share Chiayi’s local specialty.
