Tucked away in the village of Shuijing, Kouhu, right where the wind meets the tide, the owner—once a pig farmer—turned an abandoned pig shed into a signature restaurant so he could share his family’s low-profile delicacy, “Barrel-Roasted Goose.” The birds are local Golden Corn geese delivered straight from the farm, slowly roasted over charcoal, simply seasoned until the skin crackles and the meat stays tender and juicy. Regulars also swear by the “Barrel-Roasted Trotters,” whose fame has spread far and wide. The menu rounds things out with stir-fries featuring eco-raised local seafood—clams, white shrimp, and more.
