Originally opened just to make ends meet, You Ji Seafood has, through years of effort by Boss You and his wife, built a loyal customer base. Most dishes are self-taught creations. “A chef needs a heart that cares for guests,” he says. “Serve healthy, joyful food—so tasty they’ll return craving it—and you’re ninety percent there.” Regulars indeed stride in, head for their usual seats, exchange quick greetings with the proprietress, and order without menus.
Fond of Hakka cuisine, Boss You devoted himself to developing Hakka-style seafood, differing from other restaurants.
“Correct culinary spirit matters,” he adds, citing the restaurant’s flying-fish-roe omelet. Most people don’t know the roe comes ashore in clumps; it must be ground, sieved, and cleaned before use. While chatting, he crisps rice vermicelli and sakura shrimp, scattering them over the omelet for playful flair.
