Jianguo Park is a well-known old people's park in Zhonghua, Hsinchu City. It was once a thriving night market. More than thirty years ago, there were over forty stalls set up, including a small, unknown stall selling noodles, which is now the origin of the current "Original Night Market Duck Noodle". At that time, the city government decided to relocate the night market to Dongmen Market to improve the city's appearance and traffic. However, the owner was dissatisfied with the high stall rental fees charged by the government and instead set up a new location on Central Road. To help old customers find their way, they named it "Original Night Market Duck Noodle". In recent years, the business has flourished, and a branch of "Original Night Market Duck Noodle" was opened on Zhongzheng Road. The food in the store is divided into two main categories: boiled and stir-fried. There are duck noodles, entrails, duck blood, and duck intestines, among others. Eating the duck noodles while they are hot is the best way to enjoy them, so the owner emphasizes that his duck noodles must be extremely hot. The duck meat is not boiled but steamed instead. The broth extracted from steaming the duck is used to cook the duck noodles, making the soup exceptionally delicious. The stir-fried duck blood and stir-fried entrails in the store are also highly recommended dishes.
