In the Middle Ages, there was a classical dessert-making technique in Europe that involved whipping cream to create a light and airy texture. Royal chefs would prepare elaborate desserts for banquets in palaces for nobles. The time leading up to the banquet was always particularly busy, but also brought joy to the chefs. One of the key ingredients was whipped cream, which required over an hour of continuous whipping to separate the cream naturally, with occasional skimming of the foam, and then allowing it to drain and settle. This technique was applied to various desserts. The technique used in making Tilor's cheese is similar to this classical method, but applied to milk. During the cheese-making process, the milk is continuously stirred for over an hour. Using fresh milk from Hualien's Ruisui, the cheese is crafted to achieve a soft and delicate texture, making Tilor's cheese truly unique.
