Inheriting Dad's Great Noodle Tradition
On Minxiong Township's Minquan Road, there is a shop called “Bianshi Qinian Noodle” that has a forty‑year history. At first glance, the character “Qin” might be mistaken for “Tai nan” (Tainan), but the shop is actually named after the owner’s father, Mr. Huang Qinian. Locals refer to it as “Qinian Noodle.” The shop’s most popular dish is the dry noodle, made from high‑gluten flour to give the noodle an especially slick and firm texture. The owner insists on not adding any preservatives to the noodles and never using them overnight, to keep the food fresh and delicious.
