Mo Ma Taiyaki has been perceived by many Taiwanese as a "red bean pastry shaped like a sea bream," but for Japanese people, the meaning is different. During feudal times, only nobles could eat real sea bream pastries, while common people imitated the shape of sea bream with red bean pastries to share in the nobility. After working for a restaurant in the past, the owner was responsible for baking the dessert "taiyaki" for customers' meals, sparking his decision to start selling taiyaki as a business. However, after opening the shop, he found it wasn't that simple. After facing a slump in the early days, he gradually improved the recipe, eventually developing up to 15 sweet and savory flavors—perhaps even surprising the Japanese. In recent years, he introduced cream puffs filled with flowing cream, whose sales surpassed those of taiyaki! Regarding the turning point of evolution, the owner first mentioned that his former restaurant manager, after tasting them and finding them lacking, selflessly offered a restaurant taiyaki recipe. By adjusting this recipe gradually, he achieved today's excellent reputation. Moreover, his own daughter particularly loves taiyaki, making the owner feel a greater duty.
