The black‑wheel stall at the front of Xikou North Polar Pavilion has been operating since 1995, almost 25 years now. When this stall first opened, it was largely driven by Mr. Chen Xianren’s (currently the village head of Xixi Village) concern and responsibility for his family. To give his loved ones a better, carefree life, the owner started selling his favorite black wheels as a side business, and eventually, with his mother’s encouragement, he fully committed himself to running the stall.
To provide more filling food for most of the farming customers, the owner also added his grandmother’s special fried noodles to the stall’s menu. As the business flourished, he gradually introduced more fried items such as oyster pancake and tofu with oyster. The entire family has come together around this stall, working hard for their livelihood.
The owner also wants to remind all beloved customers that to maintain the noodles’ chewy texture, the traditional fried noodles are cooked fresh every day and not ordered from outside. Thus, the noodles are offered in limited quantities each day! And to preserve the crispy exterior and juicy interior, oyster pancakes and tofu with oyster are fried right in the pot. We ask all customers to be patient while they wait.
