Located next to the Lukang Folk Cultural Museum, the "New Taipei City Jin Shrimp Balls" has been passed down through two generations for eighty years. The first generation, Fu Jinjiang, moved from New Taipei City to Lukang, set up a stall in the market, and created the Lukang Shrimp Balls. He named his shrimp balls "New Taipei City Jin," and they were a delicacy at high-end banquets at the time. The second generation, Fu Xiqian, during the decline of shrimp balls, followed traditional methods to craft them. He used high-quality pure sand shrimp and incorporated a unique recipe, producing shrimp balls that were beautiful, fragrant, and delicious, reigniting the shrimp ball craze and making it the most famous product in Lukang.
