Sophisticated Taiwanese-French fusion? The most humorous French cuisine in Chiayi! On the dining table, you'll find Flower Branch Pan-fry, Braised Pork Rice Rolls, and Crispy Salted Chicken. The menu even features Chicken Rice! It's hard not to wonder, is this really a French restaurant? Meet Jerry, the head chef of Pisoni French Bistro, who previously served at the prestigious Hotel d'Alsace. After returning to Chiayi to start his own business, Jerry decided to challenge people's perceptions of French cuisine. He opted for a cozy, family-style kitchen atmosphere, replacing the often intimidating fine dining experience. By incorporating French techniques into Taiwanese street food flavors, Jerry showcases his extraordinary creativity and sense of humor. What appears to be a salad is actually called Flower Branch Pan-fry. It features tender squid, paired with lettuce and a hidden raw scallop at the bottom. When you dip it in the sauce, it surprisingly tastes like oyster omelette... The bread's butter spread is infused with the fragrance of zongye (bamboo leaves) from braised pork rice rolls... The dish called "Crispy Salted Chicken" is made from thinly pounded and pressed chicken breast, transformed into extremely thin sheets. Putting aside the chef's playful nature, his confit de canard is truly top-notch in Chiayi. Jerry's family has a history of kindness, having cooked for underprivileged children at youth centers across Taiwan. During the pandemic, they even introduced a "meal coupon" to provide warmth to those in need. A truly loving gesture.
