Walking down Lánjǐng Street, it's hard not to stop and admire the old wooden house near the intersection with Zhōngyì Street, with a black and gold sign that reads "Imodasyoukou." This is a fully booked, kaiseki-style restaurant, and the cypress wood building has a history that dates back to 1946, when it was the "Jiálín Shāng Häng." After nearly eighty years, the business has been passed down from generation to generation, from grandparents to grandchildren. For Chef Lín Jùnchéng and his wife, Chén Míngyuán, both Japanese cuisine chefs, being able to revitalize the old family business and create their own culinary venture at the site of their ancestral "startup" is a romantic yet serious mission. Both are culinary graduates, with Lín Jùnchéng having apprenticed at a renowned Kyoto restaurant and graduated from a culinary school in Osaka, before returning to Taiwan to work in the dining department of an international five-star hotel. In 2021, he founded "Imodasyoukou" in Jiāyì. The name "Imodasyoukou" consists of two characters, "yù" and "tīng." The former comes from the early days of Japanese cuisine, when leafy greens were not used, and instead, root vegetables were the main focus, represented by the character "yù," symbolizing the origins of Japanese cuisine and the chefs' initial intentions. The character "tīng" can be broken down to mean "rice field," representing crops and harvests. In addition to the booked kaiseki meals at "Imodasyoukou," the couple has also established a dessert brand called "Imodasyoukou Desserts," allowing gourmands to experience authentic Japanese cuisine, traditional Japanese sweets, and Japanese-style Western desserts all at once.
