Pin-An Douhua—Soy-Milk Douhua
Pin-An Douhua carries on the 60-year craft of a veteran tofu-pudding master; the shop’s very name promises “douhua” (tofu pudding) that you can taste (“pin”) with peace of mind (“an”). In every bowl you’ll see Pin-An’s devotion to the old ways: hand-made fresh each day, a naturally healthy dessert.
For the “soy-milk douhua,” the soy milk is pressed from top-grade, non-GMO Canadian soybeans. From the first rinse and soak—done in running, intermittently changed water—the beans are stone-ground together with oats, then filtered repeatedly and slow-boiled into a fragrant, nutrient-rich milk.
The pudding itself is also freshly hand-crafted by the ancient method: the setting powder is pure natural arrowroot starch, with no chemical additives—summer’s perfect cooler.
