Xiangyun Ryuugin, which has been awarded two stars, is an extension of Ryuugin, a Japanese restaurant located in Roppongi, Tokyo. The culinary techniques of its founder, Masaharu Yamamoto, are full of unique styles.

At Xiangyun Ryuugin in Taiwan, the meals are divided into two sets of courses: seven courses and ten courses, starting at NT$4,200. The highlight is the use of fresh local Taiwanese ingredients, combined with Ryuugin's cooking techniques, to create a kaiseki cuisine that is both traditional and innovative.

The culinary style of Xiangyun Ryuugin is good at letting guests feel the local environment and rich resources of Taiwan through food. For example, vegetables are given particular attention to their fragrance, sweetness, moisture, and astringency. The presentation also emphasizes balance. For instance, the first stock uses only the top 60% of each bonito block, and they are shaved just two minutes before being served.

Additionally, it is worth mentioning that, in addition to receiving the Michelin two-star rating, Xiangyun Ryuugin has also been nominated for the Asia's 50 Best Restaurants, known as the "Oscars of the food world." It made its debut on the list and ranked 47th.
