"Maple Forest" opened in 1987; two or three years later the founder's second son and daughter-in-law took over, specializing in a variety of snacks. Business in Dongju has always been good, and last year they renovated the shop. While it was closed for renovation, so many regulars said, "The shop's under repair, but we're still here—find a place where you can cook and keep going; where else are we supposed to eat?" During that period, the Environmental Protection staff joked, "All of Dongju is littered with your trash." Their stinky tofu is recommended even by people from the other Matsu islands: the tofu is crisp, the pickled cabbage fresh and savory. The big bowls of handmade tofu pudding are generous and silky, and the newly developed large silver-thread rolls, deep-fried and drizzled with condensed milk and chocolate sprinkles, are the soldiers' favorite.
