Dong Mao Restaurant has been in operation for over 20 years. Mr. Xie Mao, the founder of the renowned "Lotus Feast" in Baihe, chose the name Dong Mao for his restaurant because he was born in Dongshan Township and his name contains the character "Mao". With 60 years of experience in the culinary industry, starting as an apprentice at the age of 13, Mr. Xie continues to be involved in the restaurant, ensuring the quality and hygiene of the food. His son (second generation) has taken over the management of the restaurant. In 1994 (民國83年), the Baihe Town Farmers' Association organized a grand Lotus Feast, with over 10 exquisite lotus-themed dishes designed by Mrs. Xie (the wife of Mr. Xie and the leader of the home economics department) and the head chef of Dong Mao Restaurant, Mr. Xie Mao. The event had 120 tables and attracted over a thousand people from all over Taiwan. The period from May to August is the peak season for lotus production in the Baihe District. To promote local products, the farmers' association has been organizing lotus tasting events to boost sales. Lotus is a versatile ingredient with high utilization value, suitable for various dishes, sweet or savory, hot or cold. The entire lotus plant can be used, including the leaves, seeds, flowers, roots, and stems, to create delicious meals.
