Pour-over coffee brewing the sweetest dreams
Everyone has a different understanding and imagination of “coffee.” For some it is merely a pick-me-up, for others a pursuit of trends, but for Wanzhen of Evie’s Café it carries a loftier expectation—a medium for the beautiful things in life. After graduating with an MBA from Indiana University of Pennsylvania, she worked in the United States, China, and Taipei, experiencing diverse job environments. Realizing what truly suited her personality and aspirations, she evaluated her options and decided to resign, stepping toward the future she envisioned. She wanted to use a professional coffee shop as a platform to share life’s many beauties with the public.
“The entrepreneurial journey was really tough, filled with obstacles and snide remarks. I can’t count how many times I hovered between holding on and giving up.” After six years of refinement and persistence—devoting herself to roasting, extraction, and tasting—she built a clientele through online channels and word of mouth. In 2016 she finally opened a storefront, creating a physical space to share coffee. Through lectures, classes, sharing sessions, and exhibitions, she transformed the café into a hub of “beauty,” embracing literature, photography, painting, cuisine, design, and even floristry, handcrafts, and education. By offering excellent coffee and a welcoming space, she actively shares and exchanges the many facets of beauty and happiness in life.
Asked which items she most wants to share, Wanzhen answers without hesitation: pour-over and cold-drip coffee. “They offer so much variation and layered complexity; drinking them feels truly blissful.” From carefully inhaling the dry aroma to savoring the differences between iced and hot presentations, she shows that black coffee can be enjoyed in myriad ways, revealing the depth of her dedication. To weave these connections of happiness, Wanzhen persists in using beautiful coffee as her thread, and she says she will continue tirelessly.
