Ye Ming Zhi Noodle Shop, a coffee and traditional noodle shop, has emerged in Chiayi. Originating from Tainan, Ye Ming Zhi Noodle Shop has taken up residence in a decades-old building on Gongming Road. Upon ascending to the second floor, the first thing to catch the eye is the gentle sunlight outside the floor-to-ceiling windows, complemented by the terrazzo floor, simple wooden tables, and plants, creating a warm and rustic atmosphere.
Ye Ming Zhi Noodle Shop has been in operation since 1947, with a history spanning 77 years, making it a classic memory for many people from Tainan. Initially, the shop was just a small stall, with the couple working tirelessly to maintain their artisanal spirit, insisting on presenting Q-textured noodles made from freshly rolled dough every day, as well as bone broth simmered on the same day. Over the years, they have accumulated a loyal customer base and a good reputation.
Now in its third generation, the shop has introduced a "brand" management mindset and begun expanding, with two locations in Tainan and one in Chiayi. The branded Ye Ming Zhi Noodle Shop not only maintains its traditional flavors but also aims to provide customers with a "comfortable dining environment," "delightful service attitude," and "safe food hygiene" conditions.
A special recommendation is the scallion oil noodle with Chiayi DNA, which replaces traditional lard with turkey oil and comes with a side of pickled tofu in a separate cup. Consider ordering a cup of coffee after your meal to enjoy the relaxed atmosphere of the slow city.
