Chuan Jia Restaurant is located on Guangfu Road in Hsinchu, near the Old Man Hotel. It has been in operation for over a decade, adhering to the principle of providing customers with a warm, homey feeling, embodying the traditional Hakka spirit of hospitality.
Hakka mountain chicken is carefully selected from local free-range chickens that are raised on hillsides for six months, fed with corn and wild vegetables, resulting in tender and sweet meat without any feed flavor. It is served with a dipping sauce made from Hakka kumquat.
Mei Gan Braised Pork Belly is made by selecting high-quality five-layer pork, which is boiled in hot water for 30 minutes, then cooled and marinated in soy sauce to enhance the color. The pork is then fried, cooled in ice water to remove excess oil and increase its chewiness, and finally served with Mei Gan vegetables, creating a refreshing and non-greasy dining experience.
Ginger Sliced Large Intestine uses the large intestine of black-haired pigs, which must have a clean and shiny appearance. The intestines are first washed with flour, vinegar, and salad oil to remove impurities, with some fat left to preserve the flavor. If there is too much fat, it becomes greasy; if there is too little, it loses its aroma.
