The name “Bu Lao” comes from the boss’s Western name, “Bruce.” The restaurant specializes in Western-style vegetarian cuisine and hosts live performances on weekdays, capturing the very essence of a laid-back lifestyle. Pizza and vegetable dishes are the house signatures, yet the basil-pesto pasta and baked-rice dishes also sell extremely well. According to the chef, must-order classics here are the Margherita pizza, balsamic mushrooms, and Hungarian dry-braised potatoes. Among them, the Hungarian dry-braised potatoes are first diced and parboiled until 60 % cooked, then deep-fried over low heat to create a crispy exterior and soft interior. Afterward they’re sautéed with onion, minced garlic, and bay leaf, finished with black pepper and Hungarian paprika. The labor-intensive preparation yields stunningly flavorful results. Another signature, the balsamic mushrooms, is made by first pan-searing premium shiitake with garlic, then seasoning them with aged fine vinegar—both delicious and healthful, a vegetarian favorite that connoisseurs never miss.
