YAMAWABI or Yamawabi, Chiayi, is a city with mountains as its soul. The old houses at the foot of the mountains are connected by the stories of the past, and under the polishing of time, their beauty is not diminished, but instead, they emit a warm and gentle glow. At No. 375, Yanping Street, there is an old house with over 60 years of history. The owner of "Yamawabi", with nearly 20 years of culinary experience, follows the aesthetic of "wabi" (the beauty of simplicity) under the witness of the mountains, adhering to a simple and elegant style, even in the food served. The entire restaurant only offers three types of menu items: tea, sweets, and icy treats. The sweet treats are made-to-order castella, also known as "Japanese Nagasaki mini cakes", which do not use any fancy cake molds, but instead, use high-quality ingredients and unique Japanese-French techniques to present a crispy exterior and a moist interior, with an extremely enticing aroma when baked. The icy treats are "additive-free snow ice cream", made with raw fruits, natural five-spice, and special techniques to create a low-calorie, refreshing taste experience. Similarly, the simple and plain presentation belies the natural, rich fruit aroma that lingers long after the first bite, with a strong aftertaste. The tea, "a wisp of smoky red, deeply brewed tea", is likely to subvert everyone's imagination, with a smoky tea fragrance composed of floral, fruity, and longan wood notes, which cannot be found elsewhere and is exclusive to Yamawabi.
