A fire devastated Huang Hui-xue's home and left her with nothing. Her friends, in an effort to help her regain her spirits and find new purpose, suggested opening a café. "I find coffee really intriguing, and I've gradually become more skilled," she remarked, revealing her evident passion for the craft. Indeed, her pride and delight in her signature cold drip coffee stem from this very approach: unable to afford expensive equipment, she adopted a similar principle using drip flasks. By adjusting the dripping speed and water quality, she crafted each cup with unique textures and flavors. "Pairing them with the café's homemade banana brownies or passion fruit pound cakes makes for an exquisite experience," Huang said with confidence. Besides cold drip coffee, the café also specializes in "hand-poured coffee," serving it directly at customers' tables with tailored brewing methods to suit individual preferences for strength. The café's beans are locally roasted and carefully selected by Huang herself. Huang is also Chiayi's first certified cupping taster. Driven by her passion and innate palate for taste, she taught herself extensively, seeking advice and practicing relentlessly. Passing a rigorous five-day certification test on her first attempt was an exceptional feat, surprising friends and family alike and further solidifying her resolve to pursue a café business. This journey from nothing required perseverance and resilience, and each challenge only strengthened her determination.
