Hsin Yuan Soy Sauce Garden is located in Budai, Chiayi. In the early days, due to its proximity to a salt field, it was convenient to obtain salt, and therefore, numerous soy sauce factories stood in the surrounding area. However, with changes in the industrial structure, it is now the only old, well-established soy sauce factory in the vicinity that insists on purely manual brewing. To this day, the products of Hsin Yuan Soy Sauce Garden still follow the ancient method of pure manual production. The process involves soaking and boiling soybeans, making koji, and fermenting for 4 to 5 days. Then, salt is added to the mixture, which is placed in a jar and left to mature for 3 months. After this period, the soybeans can be made into fermented soybean (dòu chī), and the resulting liquid can be cooked into soy sauce. Although Hsin Yuan Soy Sauce Garden is not large in scale, the owner's lively explanations allow visitors to experience and understand the manual soy sauce-making process. At the same time, visitors can also sense the owner's enthusiasm and dedication to preserving traditional methods.
