The recommended “Crispy Fried Chicken” is a Cantonese-style fried chicken familiar from restaurants in Guangdong, Hong Kong, and Macau. Unlike ordinary fried chicken, the marinated raw bird is hung up and repeatedly showered with scalding oil until the skin turns shatter-crisp while the meat stays silky. Though the process is laborious and time-consuming, and the dish is deep-fried, it never tastes greasy—only finger-licking memorable.
