Inheriting the time-honored craft of spicy hotpot, the broth is authentically Sichuan—numbing rather than fiery. Long-simmered duck blood and tofu lie at the bottom, while the main platter is richer: lung slices, honeycomb tripe, hairy tripe, large intestine, and more. This mala pot has a singular flavor; no drink is needed, though a splash of baijiu can lift it. Never pair it with beer or soda—they ruin the taste. “Couple’s Lung Slice” is a signature Sichuan dish and our namesake; only after our veteran chefs kept refining it did this broth spread across Taiwan.
