A fire once destroyed Huang Hui Xue's home, leaving her with nothing. Her friends, wanting to help her regain her footing and find a new purpose, suggested opening a coffee shop. This marked the beginning of her journey with coffee, and as a Christian, she believes it was another door opened by God.
"I find coffee fascinating and have gradually developed a passion for it," Huang says. Indeed, her pride lies in her iced drip coffee, which she created through experimentation. Unable to afford expensive equipment, she used a similar principle with a drip dropper, combining different drip speeds and water qualities to craft unique flavors.
"Pairing it with our in-house banana brownie or passion fruit pound cake is a true delight," Huang says confidently. Apart from iced drip coffee, the shop also specializes in pour-over coffee, where the barista brings the equipment directly to the customer's table for a freshly brewed cup, tailored to their preferred strength.
The coffee beans used in the shop are roasted in-house and carefully selected by Huang. As the first cupping expert in Chiayi, Huang's passion for coffee and natural talent for flavors led her to pass a five-day rigorous exam on her first attempt. This achievement not only surprised her friends and family but also strengthened her resolve to pursue her coffee shop dream.
This journey from scratch was not easy, and several setbacks and failures only fueled her determination. Her goal was to provide customers with professional and delicious coffee in Chiayi. If you happen to pass by, consider stopping by to taste the story-filled iced drip coffee.
