New Harmony Spring Soy Sauce Pickled Food Factory is a century‑old soy sauce shop. Since its founding in Taisho 5 (1926) during the Japanese colonial era, it has been passed down to the fourth generation. The walls are covered with various certificates and business licenses from the colonial period that have survived to this day. The shop follows the ancient dry‑fermentation method, using high‑quality black beans as the base. No preservatives are added during the process; after a complicated 4‑6 month fermentation, it produces a mellow, healthy soy sauce. The shop’s prized treasure is the pot‑bottom oil.
