Chiayi’s first canelé-only shop A post-’90s guy with a sweet tooth moved home to Chiayi to start a business, choosing the “angel’s bell” canelé as his signature. In 2020 he opened the city’s first canelé specialty store. Though tucked away on the quiet Guangcai Street in an old house, he hired the celebrated studio Little Blessing Build to craft an elegant French-retreat of deep blues, dark woods, and dreamy white curtains. Passers-by are startled to find a shop devoted solely to canelés; step inside and the buttery perfume wraps around you. Besides the classic, 90 Sweet Lab stuffs its shells with matcha, coffee, apricot, cocoa, Earl Grey, hojicha, and Thai milk-tea, plus occasional limited runs—like bite-size mini canelés that demand extra labor. Seasonal assorted gift boxes appear for every holiday. Because of the pandemic, the lone pastry chef currently works solo; dine-in is suspended. Reserve your favorite flavors in advance.
