Started setting up a stall at Ningxia Night Market only in 2011, its appearance is similar to the popular oyster buns found along the western coastal areas; in terms of preparation, it's like a combination of oyster omelets, oyster pancakes, and chive buns. Chives, napa cabbage, onions, vermicelli, and carrot shavings are seasoned and mixed evenly, then several large oysters are added. A raw egg is placed on top to form the filling. Unlike oyster omelets that are coated with a flour paste, this is wrapped in a thin layer of wheat flour skin, pinched tightly like a bun, and then deep-fried over low heat. The round, fist-sized oyster buns have a golden, crispy outer layer, and are filled with rich and juicy ingredients. Hong Kong visitors who come specifically to taste it say, "Even if you can only eat while walking, what's the problem!"
