Founded by Yunnan-Burmese overseas Chinese, the family has been in Taiwan for more than ten years. Missing the taste of their mother’s cooking, they began hand-crafting Yunnan fermented tofu, pickled scallions, pickled vegetables, and traditional douchi cakes to share with relatives and friends, quickly earning a sterling reputation.
In every Yunnan household, pickled relishes appear at virtually every meal; they are naturally fermented and considered health foods. Among them, shrimp paste is an indispensable condiment in every Burmese home. Don’t let the small jar fool you—its history is long and storied. Legend has it that one year an emperor passed through a village while on campaign. The table held no dishes save one: shrimp paste with rice. Curious, the emperor joined the meal. Upon returning to the palace, he found the imperial cuisine lacked the same flavor and ordered the family brought to court to prepare shrimp paste for him every day.
