The coal-mining-era miners’ canteen “Ruisan Welfare Restaurant” serves seafood that’s both cheap and delicious—lobster, crab, crab-meat “lion’s-head” meatballs. The only non-seafood dish is “Sesame Chicken”: free-range chicken marinated in pepper and salt, steamed, then coated with heaps of white sesame and a touch of flour and deep-fried whole. The crackling skin fills your mouth with sesame aroma, and the juicy, tender meat makes it even more flavorful.
