Tamsui is lined with snack stalls, but none is more iconic than “age.” The original shop, Yang Ji Age on Zhenli Street, was the first to serve this authentic local flavor. To make age, a piece of fried tofu is slit open and stuffed with stir-fried mung-bean vermicelli; the opening is sealed with fresh fish paste, then the parcel is steamed and finished with Yang Ji’s secret sauce—a taste that lingers in memory.
