Moma Taiyaki
Many Taiwanese believe that taiyaki is simply “a fish-shaped red-bean cake,” but for the Japanese its meaning is different. In feudal times only nobles could eat real sea bream, so commoners shaped their bean cakes like the fish to share a touch of that prestige.
The owner used to work in a restaurant where he was in charge of baking taiyaki for guests’ desserts; that experience inspired him to start his own taiyaki business. After opening, however, he discovered it wasn’t as easy as he’d thought… After the initial slump he kept refining the recipe, and today he offers up to fifteen sweet and savory flavors—enough to astonish even Japanese visitors. In recent years he introduced cream-puff-style taiyaki that “erupt” when bitten, and their sales are now overtaking the originals.
Talking about the turning point, he says the first trigger came when his former restaurant supervisor dropped by, tasted the product, declared it “not good enough,” and selflessly handed over the restaurant’s taiyaki formula. The owner adjusted it step by step, eventually achieving today’s acclaimed taste. The second motivation is his daughter, who loves taiyaki; he feels a deep responsibility: “I don’t trust anyone else’s version, so I decided to make it myself.” Deliciousness and health are the core values of Moma Taiyaki.
