Eating rice noodles has long been a dietary habit among Yunnan people, especially for breakfast. Usually, fresh rice noodles are blanched in boiling water for about half a minute and placed into a bowl, then various seasonings and a sauce called “the hat” are added, and finally the broth is ladled in. The owner says one reason Yunnan people love rice noodles in the morning is speed; Longgang’s military dependents’ village is full of rice-noodle shops, and Tang Ji Rice Noodles is one of them.
