Nantou Shujin Noodle Dream Factory Chef A-Cong’s Shujin Noodle is determined to become the first Hakka restaurant in Shuishang Township, Nantou County. In 2015, it won the championship of the Hakka Culinary Competition, preserving the “pickling food culture” that Hakka people developed to keep food fresh for a long time. With years of culinary expertise, the pickled sauces are used to cook various delicious Hakka dishes, bringing innovative vitality to traditional Hakka cuisine and ensuring the sustainable transmission of Hakka culinary culture while creating a unique brand identity. Chef A-Cong’s Shujin Noodle promotes the core values and purpose of Hakka industry, reflecting on how its culture can deeply embed in the hearts of Hakka people and be understood by the general public. The lunchbox’s appearance allows customers to intuitively associate the product with Hakka embroidered cloth, indicating it is Hakka food. Through Chef A-Cong’s skilled hands, he also incorporates the old-aged winter melon pickled by his grandmother into the dish. There is no elaborate plating or flamboyant dishware; it is simply the familiar Hakka flavors of the past—“salty,” “oily,” and “aromatic”—combined with modern healthy eating habits, creating a new Hakka dish.
