Sun-Dried for a Delicious Flavor: The area around the Zengwen River used to be Taiwan's largest melon seed production region, with Madou being the main manufacturing and wholesale hub. Baoda Xiang is the pioneering store that created the Licorice and Soy Sauce melon seeds. For three generations, the family has persisted in using traditional sun-drying methods to make melon seeds, giving them a distinct sun-kissed aroma.
The process begins with soaking the melon seeds for a whole day, occasionally stirring them for a spa-like treatment. The next morning, the seeds are given a three-temperature bath, then mixed with licorice and soy sauce and cooked together. After cooking, the seeds are left to bask in the sun, and finally, they are stirred with coconut oil for a finishing touch, a process that takes a couple of days. Low Sugar, Low Salt, and High-Quality Ingredients: While using salad oil and machine drying can also produce melon seeds, this method often results in an oily smell and an unpleasant taste.
