The Jiufen Old Noodle Shop has been in operation since 1948 and is currently run by the second-generation owner, Mr. Shi, who personally cooks the noodles at the stall. Although Jiufen Old Noodle Shop is not the first noodle shop established in the Jiufen area, it is the first shop to offer beef noodle soup. From then until now, beef noodle soup has been the signature dish of Jiufen Old Noodle Shop. The earliest customers of Jiufen beef noodle soup were the local residents and miners of Jinguashi and Jiufen. This may be because mining required a lot of physical effort, so the beef noodle soup here was particularly popular among the locals and miners.
