Flavor is the thing that can evoke the most hometown feeling. Hai La Mian is a place where I can eat and share the authentic hometown taste with Taiwanese people. Born in Fukuoka, Japan, Mr. Tanaka grew up eating Hakata ramen since he was a child. At the age of 23, he came to Taiwan to work and liked the weather and human touch here, but no matter how hard he tried, he couldn't find the familiar ramen flavor. Missing it so much, he decided to take matters into his own hands and make it himself. Therefore, he became an apprentice to a Japanese master and learned the cooking skills personally. The spirit of Japanese ramen lies in the broth and noodles. The rich broth needs to be boiled for more than 8 hours continuously, and the noodles need to be quickly cooked in scalding hot water.
