Farmer Hsu Qing-shui, through grafting and varietal improvement, has nurtured astonishingly sweet fruit. Because its color is as red as a rose, it has been dubbed the “Rose Tomato.” The fruit’s sweetness is laced with the rich salinity of the salt-tinged soil, adding a unique depth to its flavor. Since its successful cultivation, the salt-field tomato has drawn food lovers from all quarters and breathed new life into local agriculture. Rose Tomato Garden lies in a small village on the southwest coast of Yunlin County, a place known as “where the wind begins and the water ends.” The soil is heavily salinized, yet beneath this salty earth grows the incomparably sweet “Rose Tomato.” Perhaps it is precisely because the plants must struggle to survive in such harsh conditions that they develop the resilience needed to bear such exquisitely sweet fruit.
