It is a specialty shop in Huatan Township that originally operated as a green grass store. After the second generation took over, they used the traditional earthen oven—previously used for baking fresh grass—to produce earthen oven chicken. The garden near the shop grows many medicinal herbs, such as pearl grass, Xianfeng grass, and Crane Lingzhi, which are incorporated into the earthen oven chicken. The Oolong Green Grass Store’s earthen oven chicken is called “Explosion Chicken.” When the chicken is cooked in the kiln, the antibacterial paper wrapped around it explodes due to the heat, hence the name. The Explosion Chicken is made from specially selected black-bone virgin chickens stuffed with Chinese medicinal herbs and rice wine, then wrapped in eleven layers of heat-resistant plastic bags, aluminum foil, newspaper, red earth, iron mesh, and other materials. Finally, it is placed in a cross-shaped earthen kiln and slow-cooked for four hours with heartwood and longan wood. Unlike ordinary earthen oven chicken, which has less broth, the Explosion Chicken has tender, flavorful meat. The broth combines the essence of various Chinese herbs, rice wine, and the chicken’s own stock, resulting in a rich, sweet aroma.
