Although the renovated Maosheng Sushi Restaurant is always bustling with long lines on holidays, it still primarily serves local Chiayi customers on weekdays. The scene of the owner and old customers chatting like family remains unchanged, only with a new backdrop. When it comes to the menu's unique features, Chef Maosheng remains faithful to the affordable, traditional Taiwanese-Japanese cuisine that has been the restaurant's hallmark for years. Classic dishes like salads, sashimi, tonkatsu, and various small plates are well-received by many customers. Upon further inquiry, it turns out that the distinctive Chiayi element in Maosheng's cuisine is none other than mayonnaise. Behind-the-scenes information reveals that Maosheng's mayonnaise has its own unique style, being a custom-made "white vinegar" specifically commissioned from a particular manufacturer.
