Tainan's unique fish noodles have captured the hearts of many foodies with their fresh and sweet flavor. Although fish noodles are called noodles, they do not contain any flour. The main ingredient comes from the often-discarded hairtail fish, which was once considered worthless by coastal people. The fish meat is deboned, pounded into a fish paste, and then kneaded repeatedly to develop its elasticity. Due to its high moisture content, the paste is dusted with tapioca starch, and then pressed through a glass bottle-rod extruder to form thin sheets. These sheets are cut into fine strands, and excess starch is removed, resulting in pure fish paste noodles.
