“Wanji Tofu Delicacies,” situated across from the historic Shenkeng Old Street’s Jishun Temple, is run by a native who was born and raised on the very lane. A Shenkenger through and through, he has spent his life in the food business here, so of course every other sentence is about tofu. The townsfolk long ago earned fame for taking humble bean curd, adding creativity, and turning it into a dazzling array of dishes. Wanji’s clientele falls into two camps: weekday regulars who arrive via National Freeway No. 3 and the Xinyi branch road from Xindian, Shilin, and Taipei’s east side, and weekend sightseers. Since opening day, three veteran chefs have jointly overseen the kitchen, upholding the creed that service is the root of the business. Beyond reputation, they impose strict standards on hygiene, ingredients, and service quality.
