Fresh fruit pulp is rich in vitamin C, a delightful discovery that has led enthusiasts to revere it as the “holy fruit” of citrus: the kumquat, originally cultivated in Jiuru Township, Pingtung. In 2001 the Pingtung Kumquat Producer Cooperative was established as a guarantee-responsibility cooperative; at the time it became clear that because lemons and kumquats ripen at different times and in different seasons, market prices were unstable and oversupply was common. Consequently, Ding-Xin Bio-Technology Co., Ltd. was founded in 2003, launching the production of pure lemon and kumquat juice. By processing large volumes during peak harvests, the company could stock up; when fresh fruit was scarce, the stored pure juice could meet market demand, thereby creating the greatest commercial opportunity and distribution channel for the region’s specialty crop.
