Northern-style rice noodles soup mostly uses thick rice noodles, and rice noodle soup made with pork broth also uses thick rice noodles; "Mackerel Hsinchu Rice Noodles" uses seafood to make the broth, and thus uses the fine Hsinchu-style rice noodles. The mackerel pieces, soup, and noodles are all delicate and fresh, with a light taste. Unlike regular rice noodle soups that have a strong soup color and flavor, the rice noodles in this dish also come with a stuffed fish ball. The mackerel and fish ball are both placed in the same bowl, making for a generous and hearty serving. There are many fried items, such as fried tofu, fried oysters, red rice wine pork, and chicken rolls, all of which are very popular.
