Miaoli City Farmers’ Association “Tian Mama Rice Bakery” was established in 2006, originally intended as a classroom for home-economics courses. In 2013 the association resolved to make the “Tian Mama Rice Bakery” a reality, using Miaoli’s famous Taichung Sen No. 2 rice as the primary ingredient to promote locally distinctive rice.
Tian Mama converts the rice into rice flour and develops recipes for rice cakes, rice toast, and more. Because dough made with rice flour is hard to stretch and shape, Tian Mama repeatedly tested every step—from rice cooking to fermentation and baking times—until they created a visually appealing, fluffy, and fragrant rice cake that overturns the public’s traditional image of rice cakes. In addition to offering delicious baked goods, Tian Mama also serves as a key gatekeeper for food safety, avoiding excessive gelling agents and baking powder and providing consumers with safe, healthy food choices.
