Tainan's first "squat squid rice noodles" was founded by Yeh Shui-lung at the old Tainan "Dacai Market". Now, it is run by the third generation, Yeh Tian-shun, and his wife, Hsu Chin-feng. The shop has been in business for over 60 years. Unlike regular rice noodles, they use Tainan's unique "thick rice noodles" made from brown rice, which is gentle on the stomach. The noodles resemble rice vermicelli in appearance but have a smooth, tender, and chewy texture that doesn't become mushy. The squid is sourced from Indonesia and is chosen for its thick and flavorful meat, which provides a satisfying chewiness. The dish is served with a light broth made from simmered squid and cuttlefish, a sprinkle of celery, a pinch of pepper, and has a refreshing and sweet flavor. No artificial MSG or sugar has been added, so you can enjoy it with confidence!
