Wanjiang's 100-Year-Old Squid Noodles - Liangxi Restaurant   In 1921, 18-year-old Chen Liangxi, a young man from Wanjiang's Longshan Temple Fire Brigade, was selling squid noodles on a pole. The temple courtyard was always crowded with men and women praying, drawing lots, and enjoying the fragrant smoke from the temple. From morning to late night, the aroma of the squid noodles filled the air.   Two servings in one bowl, Liangxi's restaurant   Liangxi's squid noodles feature crispy, sweet squid strips and handmade flying fish balls, fresh and delicious. Enjoying two different seafood flavors in one bowl, the squid and flying fish balls complement each other perfectly. Later, the business passed on to the second generation, Chen Qingshui, who set up a small stall at the Longshan Temporary Market. Although there were only five or six seats, the business was always bustling.   In 1989, the third generation, Chen Bingjun, took over. As soon as he left the military, he took over the family business, and later married and had children. But he never expected that only three years later, the Longshan Market would be demolished to build the MRT Longshan Temple Station, and everything was back to square one. He and his wife had to set up a stall under the eaves on Xiyuan Road. It was the hardest time for Liangxi's Restaurant. They had to start work after the shops closed at night. The young couple worked hard, never taking a break even on windy, rainy, or typhoon days.   Leaving the familiar place, they had to start from scratch to attract customers. Fortunately, the old customers came from far away, just to have a bowl of squid noodles from their childhood. What made them most happy was when the customers said, "We come here to see this hardworking couple!" The bitterness and warmth of living under someone else's roof filled their hearts. Through their hard work, Liangxi's Restaurant finally had its own home on Guangzhou Street in 2003.   Many years ago, due to the high cost of squid, many shops cut the squid into thin strips and covered them with thick fish paste. However, Liangxi's Restaurant always followed the traditional method of using fresh squid strips and flying fish balls. At that time, a bowl of squid noodles cost only ten dollars, while Liangxi's sold it for fifteen dollars, because the real ingredients were obvious to those who knew!   Another signature dish is the stir-fried rice noodles. The rice noodles are fully soaked in a special sauce, stir-fried with fragrant oil and scallion, then topped with a special garlic sauce. A bowl of squid noodles and a plate of stir-fried rice noodles have been enjoyed from the old days of grandparents to now. Under the efforts of the third generation, Bingjun and his wife, Liangxi's Restaurant has continuously developed classic traditional dishes such as braised pork rice and various types of noodle soups.   The taste memory of old Wanjiang   Now the 100-year-old family business is carried on by the fourth generation, Chen Yu'an. He gave up his rising rock dream and left the spotlight to enter the kitchen, working side by side with experienced female employees who had watched him grow up. In 2019, Yu'an led Liangxi's Restaurant to join the "Taipei Rebuilt" store renewal plan. The old shop was renewed, integrated with the local cultural characteristics of Wanjiang, and told the century-old old stories and new stories again.   Over the years, Liangxi's Restaurant has become a shared memory of the locals in Wanjiang. Even the filming of the movie "Wanjiang" included Liangxi's Restaurant. "Boss, five bowls of squid noodles to go!" The menu listed "what the temple gate wants," the classic dialogue and scenes recreated the youthful memories of several generations of Wanjiang residents.   Starting from the temple courtyard of Longshan Temple a century ago, then moving to Longshan Market, later to Xiyuan Road, and finally settling down in Guangzhou Street Night Market. The squid noodles of old Wanjiang have passed through the century of Longshan Temple's glory, still keeping the fresh and delicious taste of Liangxi's.
