Although the store's name is "Oyster Noodle", it actually refers to "Oyster with Intestine". The noodles are washed to remove dust and residue, then cooked in a pot with dried bonito, shrimp, and broth. The noodles are sticky but not mushy, smooth yet still have texture. The intestine and oyster are separately braised in another pot. After ordering, they are scooped up and mixed with the noodles. The intestine is moderately tender, and the fresh oyster is delicious. When eating, garlic paste, black vinegar, and chili are added. The bright color and fragrance are very tempting.
