Gyodaiyakko Sushi Kappo - Japanese Cuisine, is a Japanese restaurant located at No. 6, Lane 297, Songjiang Road, Zhongshan District, Taipei City, known for its Japanese-style counter-style sushi and Omakase non-menu creative cuisine (the chef's set menu series 【Maple】 and 【Cherry Blossom】).
In Gyodaiyakko Sushi Kappo, the term "kappo" (割烹) is a Japanese kanji word, meaning cooking. In Japanese cuisine, it also refers to "itamae" (板前) cuisine, which is also the culinary feature of Gyodaiyakko Sushi Kappo. The dedicated Japanese cuisine chef personally prepares the dishes for the guests at the counter.
The chef's set menu is a type of Omakase non-menu creative cuisine, inheriting the unique spirit of traditional Japanese itamae (板前) cuisine. From the procurement, pre-preparation, knife skills, to the Japanese cuisine techniques such as steaming, boiling, frying, stir-frying, baking, roasting, and deep-frying, everything is handled by the dedicated Japanese cuisine chef who is proficient in Japanese cooking methods. The dishes are prepared according to the seasonal vegetables and seafood, making full use of the natural flavors and seasonality of the ingredients. This highlights the exquisite creativity and characteristics of Omakase non-menu creative cuisine (おまかせ), and the chef customizes the dishes on the spot according to the guests' preferences, offering a personalized flavor experience. This is also the key point of enjoying the authentic taste of Gyodaiyakko Sushi Kappo's chef's set menu.
The chef's set menu has two price levels: the 【Maple】 set menu at 1,200 NT dollars and the 【Cherry Blossom】 set menu at 1,800 NT dollars, featuring seven to eight dishes based on the ingredients available that day. In addition to the chef's set menu of Omakase non-menu creative cuisine, Gyodaiyakko Sushi Kappo also offers a limited-time business lunch set meal.
